Dijon Balsamic Green Salad
Serves 4
This salad can be made with just a mix of dark leafy greens and tossed with it’s delicious dressing or add some other vegetables if you like. I toss the lettuce in the dressing just before I serve it and then offer other veggies on the side along with extra dressing. Don’t over dress the greens and use darker types of lettuce, not iceberg or romaine.
Here is what you need:
3 cups of mixed dark leafy greens
2 to 3 TBS olive oil
1 tsp Dijon mustard
1 TBS balsamic vinegar
½ tsp soy sauce
½ tsp sugar (optional)
1 clove garlic, pressed or minced
Kosher salt and fresh ground black pepper
Extra vegetables on the side if you want. I did sliced carrots, sliced baby cucumbers, sliced green onions and grape tomatoes. Remember don’t put tomatoes in the fridge and make extra dressing to serve on the side.
Here is what you need to do:
Rinse the greens in cold water, shake off excess water and place them on a clean kitchen towel. Lightly wrap the greens in the towel and put in the refrigerator to dry.
In a glass bowl, combine the garlic, mustard, vinegar, soy sauce, salt, pepper and sugar if using. Whisking the whole time slowly drizzle in the oil. Taste and adjust to your liking.
Tear the lettuce and put into large salad bowl. Toss with about half of the dressing. Taste it and if you want more dressing add it in. You can always add more but not less!
Serve with extra dressing on the side if you are offering the side vegetables.
