Cedar Plank Maple-Ginger Salmon

Cedar Plank Maple-Ginger Salmon

Serves 2

Here is what you need:

2 skinless salmon filets (6 to 8 ounces each)

½ tsp ground coriander

¼ cup real maple syrup

1 to 2 tsp grated fresh ginger

1 tsp grated lemon zest

1 ½ TBS unsalted butter

Kosher salt and fresh black pepper

lemon wedges for serving

1 cedar plank
spray bottle of water, in case plank flairs up

Here is what you need to do:

Soak the cedar plank in water for at least 2 hours. Make sure it’s submerged in the water.

Season the salmon on both sides with coriander, salt and pepper.

Let the seasoned salmon sit for about 15 minutes.

Heat grill to medium high.

Dry off the plank. You can put the plank on the grill for a couple of minutes per side if you want or not. I’ve done it both ways and I think it’s better if you do put it on the grill for a couple of minutes before cooking. After you remove plank from grill brush one side with oil.

In a small saucepan gently heat the maple syrup, ginger, lemon zest and butter. Stir to combine. Taste and make any adjustments.

Place the salmon on the plank and brush with some of your maple-ginger sauce, not all of it. Place the salmon on the grill. Cover and cook for 5 minutes. Brush the salmon again with the sauce and cook for another 3 or 4 minutes. Cooking times will vary depending on how thick your salmon is and how you like it cooked. We like our salmon a bit under.

Let the salmon rest for 5 minutes. Slide salmon off the plank, serve with your favorite sides and lemon wedge.
