Classic Tuna Melts

Classic Tuna Melts

Makes 4 melts

Here Is What You Need:

2 English muffins, split

1 6-ounce can of albacore tuna, packed in water, drained

1 cup shredded cheddar cheese or 4 slices of American cheese

1/3 cup plus 2 TBS mayonnaise, divided

2 TBS finely chopped celery

2 TBS finely chopped red onion

1 TBS stone ground mustard

1 tsp finely chopped fresh parsley

Squeeze of lemon juice -optional

Fresh cracked black pepper

Kosher salt if needed

Here Is What You Need To Do:

First make the tuna salad. Add the tuna into a medium glass bowl and break it up with a fork. Add in the onion, celery and parsley. Toss to combine. Stir in 1/3 cup of mayonnaise, mustard, and season with pepper to your liking. Finish with a squeeze of lemon juice if you like. Set aside. 

Put an oven rack about 5 inches from your broiler then preheat it. Place the muffins cut side up on a baking sheet and slide under broiler and toast, not too dark.

Remove from oven and spread the toasted side with remaining mayonnaise. Top with the tuna salad and then the cheese. Place the sheet back under the broiler and heat unlit the cheese melts, about 3 to 4 minutes.  

Pop them on plates. Let's Eat!!
