Tuscan Style Chicken

Tuscan Style Chicken 

Serves 4

Here is what you need:

1 pound chicken tenders, cut into one inch bites

1 12 ounce box of fettuccine

4 slices of chopped bacon

1 cup heavy cream

5 ounces of fresh spinach

4 plum tomatoes, copped

2 to 3 cloves garlic , pressed or minced

¾ cup fresh grated Parmesan

Chopped fresh basil

Kosher salt and fresh ground pepper

Here's what you need to do:

Cook the fettuccine according to package directions. Make sure you salt the boiling water before you put the pasta in it. Reserve a cup of the pasta water when done then strain the pasta and set aside.

Cook the bacon in a skillet on medium - high until crispy about 8 minutes. Make sure you stir the bacon often while cooking. When done remove bacon with a slotted spoon and set on a plate.

Season the chicken with some salt (not too much) and pepper. Cook in the bacon grease in a single layer for about 2 to 3 minutes per side then stir around and continue to cook until it's cooked through. When done put the chicken on the plate with the bacon.

Turn down the heat a bit and add the garlic and stir it around for just about 30 seconds until it becomes fragrant. Add in the tomatoes and cream and bring to a simmer and add in the spinach and stir until wilts. 

Next put in the bacon, chicken, fettuccine and Parmesan. Toss to combine and season with salt and pepper. Divide onto plates and sprinkle the basil on top. Let's Eat!!
