My Friend's Friend's Homemade Granola

My Friend’s Friend’s Homemade Granola

This granola got its name because my friend, Carolyn, brought me this granola when she and her husband were visiting from Virginia.
She told me it was a recipe from a friend of hers. It is so easy and delicious.

Here is what you need:

3 cups old fashioned rolled oats

1 ½ cups raw cashew halves or pecan halves (if whole coarsely chop)

1 cup raw, hulled pumpkin seeds

1 cup raw hulled sunflower seeds

1 cup unsweetened coconut flakes

½ cup extra virgin olive oil

½ cup packed brown sugar, light or dark

¾ cup pure maple syrup

pinch of kosher salt

Here’s is what you need to do:

Preheat oven to 300.

Put everything in a big glass bowl and mix well with a spatula.

Spread the mixture over two rimmed baking sheets. You can line the baking sheets with parchment paper if you want to for easier cleanup.

Slide the sheets into the oven for 45 minutes.You will want to toss the granola about every 10 minutes.

Remove from oven sprinkle with a little more salt if you like and let cool completely. Store in airtight containers.
I like to divide my granola into takeout containers so I can just grab it and go.
