Summertime Corkscrew Pasta Salad
6-8 side dish servings
Here is what you need:
1 pound bag corkscrew (fusilli) pasta
1 clove minced garlic
1 bag fresh spinach (9 ounces) roughly chopped
½ pint grape/cherry tomatoes sliced in half
1 cup grated fresh Asiago cheese
½ cup grated fresh Parmesan cheese
¼ cup olive oil
salt and pepper to taste
You can add some fresh herbs to this if you like.
Here is what you need to do:
Heat a large pot of water to a boil, once the water is boiling add some salt. When the salt has dissolved, add the pasta and cook until tender but still firm to the bite.Drain pasta but reserve a ½ cup of the cooking pasta water.
In a large heavy skillet heat some olive oil over medium high heat and add the garlic and let it cook for about one minute. Add in the spinach and tomatoes and cook until spinach has wilted.
Lower the heat and add in the cheese, pasta and pasta water if necessary and combine.
Pile on a serving bowl and enjoy. Let’s Eat!!
