Sweet and Spicy Salmon
Serves 2
Here is what you need:
2 5 to 6 ounce skin on salmon fillets
3 TBS hot sauce (I use Frank’s)
11/2 tsp smoked paprika
2 TBS brown sugar
2 TBS mayonnaise
4 stalks celery sliced thin on a bias
8 very thin slices of red onion
1 TBS chopped fresh chives
Kosher salt and fresh cracked pepper
vegetable oil
Here is what you need to do:
Preheat your grill or grill pan to medium high, coat with some vegetable oil.
In a small bowl mix together hot sauce, brown sugar and paprika. Give it a taste and adjust as needed.
Take 1 TBS of the hot sauce mixture and place in a large glass bowl. Set the rest aside. Add to that bowl the mayonnaise, chives, celery and red onion. Using a spatula fold everything together. Taste and if you want season with some salt and pepper.
Season salmon with salt and pepper. Place on grill, skin side up and cook for 2 to 3 minutes then flip. Note if the salmon is sticking to the grill it’s not ready to be flipped. Once salmon is skin side down, baste it with your reserved sauce. Grill for 10 to 12 minutes basting as you cook.
When the fish is cooked to your liking plate it up and serve with the celery salad on the side.
