Three Cheese Manicotti

Three Cheese Manicotti

Serves 6

Here is what you need:

12 Manicotti shells

2 pounds ricotta cheese

½ cup grated Parmesan cheese, plus more for serving if you like

½ pound grated mozzarella cheese

2 eggs, beaten

¼ to 1/3 cup of chopped fresh parsley, plus more for serving

Kosher salt and fresh cracked black pepper

1 25 ounce jar of your favorite marinara sauce or make your own

Here is what you need to do:

Preheat oven to 400.

Cook the manicotti shells according to package directions. When done drain and let dry on paper towels.

In a large glass mixing bowl combine the cheeses, eggs, parsley, little salt and pepper.

Pipe the cheese mixture into each of the shells. If you don’t have a piping bag you can put the cheese into a zip-lock bag and snip off a corner.

In a baking dish put a thin layer of the sauce then place the filled shells in a row. Cover the shells with the remaining sauce.

Pop it in the oven for 18 to 20 minutes. Let cool 10 minutes before serving.
