Basil Pesto Tortellini

Basil Pesto Tortellini

Serves 4 as a main dish or can be a side dish

This can be served slightly warm or at room temperature.

Here is what you need:

20 ounce package of cheese tortellini, either frozen or refrigerated

1 ½ cup cherry or grape tomatoes, sliced in half

½  to 1 cup Caesar salad dressing

1/3 cup capers, rinsed and drained

1/3 cup sunflower seeds

2/3 cup fresh grated parmesan cheese

4 scallions, chopped

¼ cup basil pesto

¼ tsp garlic powder

Kosher salt and fresh cracked black pepper

8 fresh basil leaves, cut into thin ribbons for garnish

Here is what you need to do:

Cook the tortellini according to package directions. Drain and let the pasta cool. Lightly toast the sesame seeds in a dry pan over medium heat then let cool.

When the tortellini has cooled and the pot you cooked it in has also cooled put the pasta back in the pot. Add in the tomatoes, ½ cup dressing, capers, seeds, 1/3 cup parmesan, scallions, pesto and garlic powder.

Gently toss to combine. Taste. Season with salt and pepper. Add more dressing if you like.

Put in bowls and top with remaining parmesan and basil ribbons.
