Herb Stuffed Grilled Branzino

Herb Stuffed Grilled Branzino

Serves 2

Here is what you need:

2 whole branzino , gutted and scaled, tail in tact

Sprigs of fresh herbs like basil, parsley, cilantro or thyme

4 lemon slices

2 TBS olive oil

Kosher salt and fresh cracked black pepper

1 lemon sliced in half

Serve with herb oil. Here is what you need for the herb oil:

¼ cup olive oil

½ lemon, zested and juiced

finely chopped herbs of your choice,thick stems removed

Kosher salt and pepper to taste

Mix all ingredients together in a bowl, taste for seasoning.

Here is what you need to do:

Ask your fish monger to clean and descale your branzino if needed.

Pat the fish dry with paper towels. Preheat your grill to high, you can also use a grill pan.

Season the inside of the fish cavity with salt and pepper and stuff with lemons and herbs.

Brush the fish skin with olive oil and place stuffed fish on the grill and cook for about 5 minutes, carefully turn over and grill another 5.

Remove fish from grill and let rest on a platter. 

While the fish is resting put the lemon cut in half on the grill, cut side down.

Grill until you see nice dark grill marks on the lemon.

Remove the lemon and herbs from the cavity of the fish, slice off the tail if you want. Pour the herb oil over fish and finish with a squeeze of the grilled lemon.
