Baked Apples With A Cream Biscuit Topping

Serves 2

You will need 2 six ounce ramekins.

Here’s what you need:

For the apple filling:

1 large apple, Honeycrisps are good.

1 TBS unsalted butter, cut into little pieces

2 TBS sugar

1 tsp all-purpose flour

¼ tsp ground cinnamon

1/8 tsp ground nutmeg

For the topping:

¼ tsp baking powder

2 tsp sugar plus another ½ tsp to sprinkle on top of the dough

3 TBS heavy cream

¼ cup all-purpose flour

pinch of salt

Vanilla ice cream for serving

Here’s what you need to do:

Preheat your oven to 400 degrees.

Peel and core the apple then cut it into small dices, about ¼ inch. You should have enough diced apple to fill the ramekins.

In a large bowl combine the 2 TBS sugar, cinnamon, nutmeg, flour. Mix well, then add in the butter then the apples. Toss to combine.

Lightly spray your ramekins with non-stick spray. Fill them up with the apple mixture. Tent the ramekins with foil and pop into the oven. Bake for 35 minutes.

While the apples are baking let’s make the topping.

In a bowl combine the flour, baking powder, sugar and salt. Mix well then add in the cream. Work the dough with your fingers until all combined.

When the apples are ready to come out of the oven, give them a stir and press down on them to sink them into the juice. Top with little flattened dollops of the topping dough. Sprinkle the tops with the remaining ½ tsp of sugar.

Slide back into the oven for 15 minutes. Turn on broil and let the tops brown slightly. Don’t take your eyes off it, you don’t want it to burn.

Let cool, then top with ice cream or serve on the side. Let’s Eat!!
