Grilled Irish Cheddar Cheese Sandwich

Grilled Irish Cheddar Cheese Sandwich

Serves 4

Here is what you need:

5 TBS room temperature unsalted butter

2 TBS chopped fresh parsley

2 TBS chopped scallions

2 TBS chopped fresh chives

8 slices of bread

8 slices of Irish cheddar cheese

16 slices of bread and butter pickles

Here’s what you need to do:

Mash 4 TBS of the butter with the parsley, scallions and chives.

Spread the mixture on 4 slices of bread. Top each slice with the 2 slices of cheese then top each with 4 pickles. Put the other slices of bread on top of each and spread the remaining  butter on both sides.

In a skillet or grill toast the sandwiches until golden brown on both sides. When toasted, spread the remaining herb butter over the top of one side of the sandwiches. Slice in half and serve. Let’s Eat!!
