Asian Lettuce Wraps

Asian Lettuce Wraps

Serves 4

Here is what you need:

1 head of butter lettuce – washed and large leaves reserved

1 ½ pounds ground pork (can use ground chicken or turkey)

1 can (8 ounce) water chestnuts, drained and chopped

1 small bell pepper chopped

½ cup shredded carrot

½ onion, diced

1 to 2 TBS pressed or minced garlic

1 TBS grated fresh ginger

1/3 cup low sodium soy sauce

¼ cup hoisin sauce

1 TBS toasted sesame oil

1 TBS fish sauce

2 tsp sriracha sauce

¼ tsp red pepper flakes – optional

olive oil

chopped scallions or chives for garnish

This pork mixture is also good on rice!

Also if you want to make a side sauce just whisk together ¼ cup of soy sauce with ¼ cup of sweet chili sauce. I recommend it.

Here’s what you need to do:

In a bowl combine the soy sauce, fish sauce, garlic, ginger, hoisin sauce, sriracha and red pepper flakes.

Warm the sesame oil and about 1 TBS olive oil over medium- high heat.

Add in the onions, peppers, water chestnuts and carrots. Sauté for about 5 minutes. Add pork and break it apart with a wooden spoon

When pork is cooked stir in sauce and reduce heat to medium-low. Let simmer about 10 minutes, taste and adjust seasoning as you like.

Scoop pork mixture  into lettuce cups and garnish with scallions or chives if you like and also optional top with the sauce. Let’s Eat!!
